Situate the oven rack 4 to 6 inches below the heating element and set the oven to broil. To make the marinade, add 1/2 cup brown sugar (or turbinado) and 1/2 cup soy sauce (I use Braggs Liquid Aminos) to a zip-top bag. Use this mixture to marinate the steak in the refrigerator in a Ziploc-type bag for 4 to 24 hours. Take the steak from the bag and pour off the marinade then add the steak to the pan. Heat a grill pan or large skillet over medium high heat with 1 tablespoon of the oil until shimmering. Let simmer and reduce until half the liquid is gone, about 10-15 minutes. Combine the oil, soy sauce, vinegar, sugar, and garlic powder with half of the chopped onions. Add the steak to a zippered gallon freezer bag with ¾ cup of the marinade and let sit for at least 15 minutes or up to overnight in the fridge. In a small saucepan over medium heat, add all the liquid from the plastic bag into the pan.Once the steaks are ready to cook, heat up the Flat Iron Griddle and remove the steaks from the plastic bag and place on the griddle.Place in the refrigerator to marinade at least three hours.Place the steaks into the plastic bag then seal it up and massage around.Whisk the marinade together in a measuring cup then pour into a resealable plastic bag.But we also love the bold flavors from the Asian inspired marinade in this recipe!
